My new go-to meal: Lean & Clean Sausages, Brussels Sprouts Remix

Know what I dig? Brussels sprouts. They’re my jam. I want it everyday and in every way. Yes, I realize that I sound creepy and sexual talking about a vegetable but I don’t care. I love the hell out of them. So, when I want a fresh, non-tupperware meal I turn to brussels sprouts and whatever else I can find in my fridge.

This quick and easy Paleo recipe is the perfect meal when you’re hangry and in a pinch. If you have 10 minutes you can make this meal. It’s completely idiot-proof, too. Best part, you only use one pan, making clean-up painless.

Ingredients:

1 medium yellow bell pepper, chopped

1 cup brussels sprouts, whole or halved

1 Roma tomato, chopped

5 sausages, any style, any flavor, chopped

1 tsp EVOO (Olive oil, a la Rachel Ray)

Instructions:

1. In a hot oiled skillet, put in your chopped sausages and cook through 5-8 minutes

2. Put the sausages aside and pour another bit of EVOO into the pan, if needed

3. Throw in all the veggies into the pan, saute 5-8 minutes or until tender

4. Throw in the sausages and mix

5. Eat up!

P.S. If you want to get wild up in this dish, add bacon. And Avocado. Your taste buds will explode with delight!
